You wont get code if sensor read bad temp. On mine 2.0tdi CR there is coolant temp sensor on radiator exit and when it fail (show big temp even if it is not) then it hold fans always on. To me looks like bad connection somewhere. Car probably won't start without power to cluster because of immo. Check powers and ground to cluster

You did not say what engine you have? Could be vaacum leak but if it is CR diesel it often can be regulator on hpfp.

Nope, I don't want my coolant gauge showing 90c when my real temp reading with obd scanner is showing 70. Had that on old golf mk4 and fixed it with program where cluster showed real coolant temp but now most things changed so I'm looking for someone with temp charts
