Are you sure you need to remove the carriers? On my 8p you only have to remove the calliper and bolt in the disk. Maybe some models are different but I would check before you remove them just incase there is no need.

Where is the hissing coming from, under the bonnet? You need to follow the sound and find out where it's coming from. That is your best bet in finding out the problem. Could be a vacuum hose that's been pulled off. Or maybe a boost pipe has been pulled off. Is the car driving normally?

This may sound silly but have you checked the undertray? They have to remove this to drain the oil! Maybe they haven't fixed it back on properly due to rusted bolts or broken clips. I would put my hand under and give it a few hits to see if it's loose.

I wrapped my headlights, fogs and rear lights, also wrapped the chrome grill surround and added a sunstrip, also done my blacked out badges. Cheap and easy to do the wrapping if you know your way around a scalpel, skweegy and heat gun.
