My S3 was November 2020 and had August 2020 software from collection and the Wireless Apple Carplay worked from day 1 but I did have all the software updates which improved the flickering MMI when on wireless carplay

Strange mines off and works fine - It's a bit temperamental sometimes - Try using a cable with it off on the phone and see if that triggers it and then try wireless again Like I say mine worked fine in my S3 - 2020 year

Just select Carplay on the MMI - Once it's off on the phone you don't need to go near that again - It just stops it automatically firing it up which I found annoying when I only wanted the radio on

Well not sure exactly with your issue but it does mean you have to start Carplay manually
