Bear in mind that you don't need to remove the whole stack, you can support the stack with a suitable Reinforced Steel Joist(RSJ), which I guess is what your neighbour has done if her stack is still sticking out of her roof.

Be carefull enclosing them, they get very hot and need a certain amount of space to dissipate the heat. Have a look on screwfix, they have got fire-rated hoods which might do the trick. Is your kitchen a single storey elevation? Is the ceiling insulated?

Agree with Nilz, we went to Cancun and stayed at the Moon Palace. It was amazing, best 2 weeks ever! Perfect for honeymoon. Friends also got married there and loved it so much they've been back 3 times!!
