I’m not sure if their compound has room. But, you can at least give them a call.
Failing that, just buy a cheap set of 16” Audi wheels from eBay - as cheap as £50.
I use Spit & Polish in Tonbridge, Kent. I’ve been using them since 2001, brilliant job.
They refurbished a set of OEM 19” B7 RS4 wheels. I opted for diamond cut exterior, despite them being originally powder coated.
The cost? £260 inc. VAT, collection and delivery.
It would be much easier (and cheaper) to swap a C5 / D2 / D3 V8 engine into your B5, than trying to make a B6 S4 a B5.
If you pick up a D2 A8 v8 engine, you’ll still need to use a C5 A6 4.2 wiring harness. And if you go with a D3 V8, you’ll need to use an S6 harness and ECU.
It's possible to remove the old discs with the carrier in situ, only if the discs are worn really thin. But, you will not get the new ones on, they'll be too thick.
If the carrier bolts are worn (internal 8/10mm hex?) I would bash on an appropriate 12-point socket, and remove them that way.
There are 6-speed 01E FWD manual gearboxes, that will work just fine, from the following models:
C4 100 / A6 2.5 V6 TDI FWD.
C5 A6 2.5 V6 TDI FWD.
Use a B5 S4 / 2.5 V6 TDI Quattro shifter, and its mounts, with any B5 quattro subframe, and that's it.
