The brakes will still work but you wont have any ABS. @crazy88 just sent his ABS pump off for repair. I think it was a good price and quick turn around.

Did you fit or wire in the heated seats? I fitted heated pads to my standard B5 seats and wired them to the standard heated seat controls via the kufatec loom. If you're interested in a Facelift bonnet grill or Facelift vents let me know. I got both.

the bluetooth ELM units will work but mainly used for basic data logging. Its best to get a VCDS cable.

No CC module for the B5. Its all done via the ECU and DBW. You do have DBW?

You can check the continuity between the cables. I think its a simple switch setup sending a positive signal in to the stalk and then each button press sends that down the cables. I found a link where someone made their own CC with a series of switches on his dash but can't find it now.

That should work. I got no idea mate. That's all I did with mine and it worked. You don't get any symbol on the dash to say its working. Just make sure you're doing over 20mph for it to work.
