Probably been asked a million times so apologies in advance!

For the moment I want to retain my Concert head unit and current Bose setup as I can't afford the Andy Mac setup yet and I've got a Phat Box so want to retain that functionality.

I'm aware I need 2 ohm speakers, can I replace the fronts with something like JBL GTO508c's or Infinity Kappa 509c's?

The Bose front speakers are actually 1 to 1.5 ohms. If there's nothing wrong with the Bose units then I would stick with them. Anything you fit will require adapters and they will be 30% higher impedance so the Bose amp will have to work a lot harder to power them with no discernible improvement in quality, it may even sound worse.
If you have a crackly Bose speaker then I would replace it like for like for one on ebay.
