Another Temperature Gauge Question!!!

Right have figured a pattern.

Start the car and it rises to 90 degrees fine. drive around as normal its fine.
If if i am in slow moving traffic or idle for about 10 mins once warmed up. then the temperature will rise to about 95-100.but returns back to normal after about 10 mins of normal driving?

If i take the car to about 4500-5000 in each gear and basically have fun then the temperature gauge falls just under 90 and returns back to normal after about 10 mins of normal driving?

Could be one of the engine temp sensors, giving the ECU duff info. This will show up on VAGCOM. Otherwise it could be the thermostat sticking. Doubt it's the fans playing up as this normally results in consistent hot or cold running, not both. I had consistent cold running, unless stuck in traffic, and it was a duff sensor and a sticky thermostat.
