Right folks.
So it turns out the p.s fluid leak is from my steering rack, and seeing as the clutch is still useable at present and the rack isnt I think the sensible approach for me right now is to deal with the rack first before going any further with the clutch scenario.

I really should have thought about quattro before buying the car. Maybe if I hadn't put so much effort into it so far I might have sold it and bought one, but the way things are going you never know......it...

Was looking at Sachs Xtend kits online there. Part numbers are one digit different. Both are 240mm diameter with 23 teeth and pressure plates physically look...

Im only 2wd but been told that a standard clutch won't last long with stage 1, and I would like to try and make stage 2 at some point. If things stop breaking that is.... And to add to things it's literally just blown a power steering hose or pipe today while I was out as well...

Definitely gets easier, even noticed just going from the nearside rear last night to the offside rear tonight that it was easier.
Didn't do a great deal of miles with just the front down. Did go over some speed bumps though and it was fine. Although they were full width ones and not the partial pyramid with the top off type ones. Also I'm running without an under tray.

Currently have the nearside off as an assembly. Pinch bolt for track rod end was aslo siezed though so had to unscrew that from the inner rack link to get the lot off...
