Snappy throttle

Hi guys, finally got myself another 2.8 v6 but i have my issues

Basically the throttle is sooooo responsive it makes it impossible to change gear smoothly, if im at 30mph and hit a pot hole and it judders my foot the car jumps also!

I plugger my scanner onto it and it came up with coolant temp switch.....could this be the reason?

I don't know about the v6, Is it a cable operated throttle?

Try doing a throttle body adaptaion ?!?

Has the battery been disconnected or drained recently ??
