Quick question. What is the absolute largest wheel and tire you can fit to a stock S3 8P please?

Do you mean OEM wheels or aftermarket?

I reckon it's gonna be something like 19x8J ET45 with 225/35/19 or is it 225/30/19? One or the other anyway
