Set the seat to the position you want, then holding down the Red M button also press either button 1,2 or 3 and hold both buttons down for about 5 secs (should here a click), your seat position is now set to which ever position you choose. If the seats have moved, just press the button you choose for your position and the seats will return.
Note. if the door is open and the engine off, you only have to press the number button once and the seats will move to the programmed position, if the door is shut or the engine running then you have to hold the number button until the movement has stopped.
It is also possible to program your key fob to different positions so that depending on the key the seats move to your preferred position upon un locking - but I can't remember how to do that off the top of my head and its been 2 years since I sold my A6
