ECU Flashing?

So I've been trying to get more information about this but I'm a little confused. Firstly, I read that the 8V ECU is encrypted. So if I get a custom map they have to flash over their own unencrypted version. Is this correct? So if I bring the car into the dealership at all, the dealer will know immediately that its been flashed. Also that the 8V ECU is no longer flashable from the OBD port? One must remove the ECU from the car to flash it and it has some security bolts holding it in place?

So is it at all possible to have a custom tune and be able to bring it into the dealership? Can I buy some hardware/software to backup the ECU before the custom map, then when I bring it in I can restore the old encrypted code on my own? What kind of hardware/software are the tuning shops using?

the Tuner will have the OEM file from the ECU so will be backed up. Also you dont have to remove the ECU for it to be remapped anymore. where are you based

I'm in southern Germany, there's a lot of places I can go to which will do everything for me.

I was really looking for information on how to do this myself and not to always have to rely on someone else.
