Erratic temp gauge

Hi all new on here got a A4 B7 3.0tdi been played with lots!!! Just started to have problems car gets to temp but then needle will go into red within seconds coolant warning will got mental then after 5-10 seconds gauge will drop back to normal running any ideas would be appreciated thanks all.
